Scallop ceviche with almond slivers and Quebec strawberries, watermelon radish and lime water
Chanterelles on farmhouse bread, egg yolk emulsion, port and garlic flower jus
Beef short rib with Quebec cheese aligot, truffle beef jus, roe and candied leeks
Quebec Comtomme cheese, fig jam and sourdough bread
Whipped chocolate ganache, maple crumble, pineapple rum coulis and chocolate chips
Five glasses of tasting wine
